
Ingredients:
• 3 cups – finely chopped Coriander leaves
• 1/2 cup – finely chopped pudina leaves
• 2 cups – besan (chickpea flour)
• A handful – Rice or Corn flour
• 1 tsp – ginger-garlic paste
• 1 tsp – Red Chilli powder
• 1 pinch -turmeric powder
• 1 tsp – Dhania powder
• 1/2 tsp – ajwain seeds (omam)
• 1 tbsp – oil
• 1 big pinch -cooking soda
• Salt
Method:
- In a wide bowl, mix all the ingredients thoroughly with water without any lumps. The batter should be like the dosa batter. Do not add more water.
- Take a cooker container and spread some ghee on it.
- Pour the batter and steam it in the cooker like idlis.
- Do not put on the whistle.
- Steam it for 15 minutes till it is cooked well.
- Check if cooked by inserting a knife. Cool and cut into squares.
- Take a non-stick pan and drizzle with some oil.
- Place the kothambir squares one by one and grill till crisp.
