Ingredients:

• 3 cups – finely chopped Coriander leaves
• 1/2 cup – finely chopped pudina leaves
• 2 cups – besan (chickpea flour)
• A handful – Rice or Corn flour
• 1 tsp – ginger-garlic paste
• 1 tsp – Red Chilli powder
• 1 pinch -turmeric powder
• 1 tsp – Dhania powder
• 1/2 tsp – ajwain seeds (omam)
• 1 tbsp – oil
• 1 big pinch -cooking soda
• Salt

Method:

  1. In a wide bowl, mix all the ingredients thoroughly with water without any lumps. The batter should be like the dosa batter. Do not add more water.
  2. Take a cooker container and spread some ghee on it.
  3. Pour the batter and steam it in the cooker like idlis.
  4. Do not put on the whistle.
  5. Steam it for 15 minutes till it is cooked well.
  6. Check if cooked by inserting a knife. Cool and cut into squares.
  7. Take a non-stick pan and drizzle with some oil.
  8. Place the kothambir squares one by one and grill till crisp.
