Ingredients:

• 1/2 kg – tender ladyfingers/okra
• 2 – onions, chopped finely
• few Curry leaves
• 1 tsp – Ginger and Garlic paste
• 1/2 tsp – Mustard Seeds
• 2 tsp – chilli powder
• 1 tsp – coriander powder
• 2 – medium size tomatoes, chopped
• 1/2 tsp – Turmeric powder
• 2 tbsp – oil
• salt for taste

Method:

  1. Wash ladyfingers and dry them well.
  2. Cut them into thin round shapes and them keep aside.
  3. Heat oil in a pan and add mustard.
  4. When they splutter, add curry leaves and onions and fry till they turn golden brown.
  5. Add tomatoes, chilli powder, salt, turmeric powder, coriander powder and ginger garlic paste and saute for few minutes.
  6. Now, add the ladyfingers and mix well.
  7. Cook on low heat for a few minutes till the ladyfingers are cooked.
  8. Care should be taken not to overcook or they will get smashed.
