Ingredients:
• 1/2 kg – tender ladyfingers/okra
• 2 – onions, chopped finely
• few Curry leaves
• 1 tsp – Ginger and Garlic paste
• 1/2 tsp – Mustard Seeds
• 2 tsp – chilli powder
• 1 tsp – coriander powder
• 2 – medium size tomatoes, chopped
• 1/2 tsp – Turmeric powder
• 2 tbsp – oil
• salt for taste
Method:
- Wash ladyfingers and dry them well.
- Cut them into thin round shapes and them keep aside.
- Heat oil in a pan and add mustard.
- When they splutter, add curry leaves and onions and fry till they turn golden brown.
- Add tomatoes, chilli powder, salt, turmeric powder, coriander powder and ginger garlic paste and saute for few minutes.
- Now, add the ladyfingers and mix well.
- Cook on low heat for a few minutes till the ladyfingers are cooked.
- Care should be taken not to overcook or they will get smashed.
