
Ingredients:
• 3 cups – lobia, soaked overnight
• 4 onions, big size chopped
• 6 tomatoes, medium size chopped
• 2-3 Green chillies
• 4 tbsp – Ginger and Garlic paste
• 2 tsp – haldi/turmeric powder
• 4 tsp – mirchi/chilli powder
• 4 tsp – dhaniya/coriander powder
• 2 tsp – Garam Masala
• 4 tbsp – desiccated Coconut
• 4 tbsp – yogurt
• Coriander leaves for garnishing
• 3-4 tbsp – oil
• Salt to taste
Method:
- Heat oil in a pan and saute onions till they turn pink.
- Add ginger and garlic paste and saute.
- Cook till light brown in colour.
- Add tomatoes and stir.
- When soft, add salt, haldi, mirchi, green chillies, some coriander leaves, garam masala, coconut and mix well.
- Allow it to cook well or till oil separates.
- Now add yogurt or curd and stir and leave aside for 5 minutes.
- Keep stirring every 2 minutes.
- Add lobia and mix well; add water till lobia is covered.
- Now pressure cook up to 4 whistles.
- Once done, garnish with coriander leaves and serve hot with rotis or jeera rice.
