Ingredients:

• 3 cups – lobia, soaked overnight
• 4 onions, big size chopped
• 6 tomatoes, medium size chopped
• 2-3 Green chillies
• 4 tbsp – Ginger and Garlic paste
• 2 tsp – haldi/turmeric powder
• 4 tsp – mirchi/chilli powder
• 4 tsp – dhaniya/coriander powder
• 2 tsp – Garam Masala
• 4 tbsp – desiccated Coconut
• 4 tbsp – yogurt
• Coriander leaves for garnishing
• 3-4 tbsp – oil
• Salt to taste

Method:

  1. Heat oil in a pan and saute onions till they turn pink.
  2. Add ginger and garlic paste and saute.
  3. Cook till light brown in colour.
  4. Add tomatoes and stir.
  5. When soft, add salt, haldi, mirchi, green chillies, some coriander leaves, garam masala, coconut and mix well.
  6. Allow it to cook well or till oil separates.
  7. Now add yogurt or curd and stir and leave aside for 5 minutes.
  8. Keep stirring every 2 minutes.
  9. Add lobia and mix well; add water till lobia is covered.
  10. Now pressure cook up to 4 whistles.
  11. Once done, garnish with coriander leaves and serve hot with rotis or jeera rice.
