Ingredients:
• 1.5 cup – Maida
• 2 tsp – ground Cinnamon
• 1.5 tsp – baking soda
• 1 tsp – Nutmeg
• 1/2 tsp – salt
• 3 cups – grated Carrot
• 1.5 cup – Sugar
• 1 cup – oil
• 1 cup – chopped Walnuts or Cashew nuts
• 3 – eggs, beaten
Method:
- Sift together flour, cinnamon, soda, nutmeg, salt.
- Mix carrots, sugar, oil, nuts and eggs and blend.
- Add dry ingredients to the egg mixture and pour into 10 inch pan.
- Cook on high power in microwave for 10-11 min.
- If you feel the cake is unevenly cooking, keep changing the position of the pan.
- When done, the cake will pull away from the edges of the pan.
