Ingredients:

• 1.5 cup – Maida
• 2 tsp – ground Cinnamon
• 1.5 tsp – baking soda
• 1 tsp – Nutmeg
• 1/2 tsp – salt
• 3 cups – grated Carrot
• 1.5 cup – Sugar
• 1 cup – oil
• 1 cup – chopped Walnuts or Cashew nuts
• 3 – eggs, beaten

Method:

  1. Sift together flour, cinnamon, soda, nutmeg, salt.
  2. Mix carrots, sugar, oil, nuts and eggs and blend.
  3. Add dry ingredients to the egg mixture and pour into 10 inch pan.
  4. Cook on high power in microwave for 10-11 min.
  5. If you feel the cake is unevenly cooking, keep changing the position of the pan.
  6. When done, the cake will pull away from the edges of the pan.
