Ingredients:

• 2 cups – Mixed Vegetables (carrots, zucchini, green beans, chayote, green peas)
• 1 – Onion (cubed)
• 1/4tsp – Turmeric powder
• 1/2tsp – Mustard Seeds
• A few Curry leaves
• 2 – Dry Red Chillies
• Oil
• To Grind as Paste:
• 1tbsp – Coriander seeds
• 2tsp – Cumin seeds
• 1tsp – Peppercorns
• 1/2 inch – Ginger( chopped)
• 3 – Green chillies
• 1/2cup – Grated Coconut
• 2tbsp – Roasted gram
• 1cup – Yoghurt
• Salt

Method:

  1. Grind all the ingredients in the Grind as Paste list.
  2. Boil all the vegetables in water with salt, turmeric powder, and the paste. Cook until the vegetables are done and the gravy thickens.
  3. Heat oil for tempering, add mustard seeds, curry leaves, dry red chillies and fry until it browns.
  4. Add this tempering to the vegetables and remove from flame.
  5. Serve hot with rice and papads or pickles.
