
Ingredients:
• 2 cups – Mixed Vegetables (carrots, zucchini, green beans, chayote, green peas)
• 1 – Onion (cubed)
• 1/4tsp – Turmeric powder
• 1/2tsp – Mustard Seeds
• A few Curry leaves
• 2 – Dry Red Chillies
• Oil
• To Grind as Paste:
• 1tbsp – Coriander seeds
• 2tsp – Cumin seeds
• 1tsp – Peppercorns
• 1/2 inch – Ginger( chopped)
• 3 – Green chillies
• 1/2cup – Grated Coconut
• 2tbsp – Roasted gram
• 1cup – Yoghurt
• Salt
Method:
- Grind all the ingredients in the Grind as Paste list.
- Boil all the vegetables in water with salt, turmeric powder, and the paste. Cook until the vegetables are done and the gravy thickens.
- Heat oil for tempering, add mustard seeds, curry leaves, dry red chillies and fry until it browns.
- Add this tempering to the vegetables and remove from flame.
- Serve hot with rice and papads or pickles.
