Ingredients:

• 1 cup – thick, peeled Raw Mango pulp
• 2.5 cups – Sugar
• 1.5 cup – water
• 1/4 tsp – citric acid
• 1/8 tsp – KMS

Method:

  1. Add sugar and water in a deep vessel.
  2. Heat and bring to a boil.
  3. Simmer till syrup is sticky but not one thread.
  4. Add citric acid, stir till dissolved and take off fire.
  5. Cool and add to mango pulp.
  6. Add dissolved KMS to mixture and stir.
  7. Mix till well blended.
  8. Bottle in sterilised sauce bottles.
  9. To serve:
  10. Add 1 tbsp of the syrup to a 200ml glass.
  11. Add ice cubes and top with cold water.
  12. Mix well and serve chilled.
