
Ingredients:
• 1/2 cup – red Pumpkin (cut into 1 inch pieces)
• 2 cups – thick Yoghurt
• 1 – onion, cut into small pieces
• 1/2 tsp – chilli powder
• 2 tbsp – fresh coriander for garnishing
• 1 tbsp – oil
• 1/2 tsp – Mustard Seeds
• 1/2 tsp – split Urad Dal
• 2-3 Red Chilli (dried)
• a few Curry leaves
• a pinch of Asafoetida
• salt
Method:
- Keep the red pumpkin covered in a microwave bowl and microwave for 3-4 mins.
- Mash the cooked red pumpkin well. Allow it to cool.
- After it cools down, add yogurt, salt, chilli powder, cut onions and mix it well.
- Heat oil in a pan and add hing, mustard seeds, curry leaves and urad dal. When it turns slightly brown, add the yogurt-pumpkin mixture to it.
- Garnish with coriander and serve.
