Ingredients:

• For Bhaji:
• Carrots- 1/4 cup (small diced).
• Cauliflower- 1 cup (finely chopped).
• Peas- 1/2 cup.
• Potatoes- 1 1/ – 2 cups (mashed).
• Capsicum- 1 (finely chopped).
• Onion- 1-2 (finely chopped).
• tomato- 2-3 (finely chopped).
• Garlic- 5-6 Cloves (chopped).
• Butter- 2-3 tbsp.
• oil- 2 tbsp.
• Ginger paste- 1 tsp.
• Garlic paste- 1 tsp.
• .
• For pav:
• Pav or buns – 8 (store bought).
• Butter – for frying (as per your requirement)| Seasoning: Salt- according to taste.
• chilli powder- 1 tbsp.
• Coriander powder- 1 tbsp.
• 1.5 tsp – Turmeric powder.
• 1/2 tsp – Black salt.
• 1.5 tsp – Pav bhaji masala or.
• Make your own:

Method:

  1. Pre-preparation
  2. Boil the potato and mash it well. Keep aside.
  3. Boil cauliflower, carrot, and peas till soft. If any water remains do not throw it away you could use it later to alter the consistency of bhaji.
  4. Method
  5. In a heavy bottom wok add oil and butter saute onion and butter along with the garlic.
  6. Add ginger-garlic paste and saute till the onions are soft.
  7. Add the tomatoes till its cooked and separates from the sides of the vessel leaving oil.
  8. Add the seasoning ingredients and stir well to mix the powder well.
  9. Add the boiled vegetables and mix well to ensure the spices are incorporated well.
  10. Using a potato masher, you could mash the vegetables. add water gradually if you feel the vegetables are thickening too much.
  11. On a tawa add butter and place the pav. Split the pav lengthwise like a book. Do not cut it off as two separate pieces but place openlike a book.
  12. Soak up the pav with butter.
  13. Serve the pav with chopped onion, wedges of lime and the bhaji, garnish it with coriander.
