Ingredients:

• 3 kg – boneless leg of lamb
• 7-8 – Garlic cloves, minced
• 1/4 tsp – minced Ginger
• 2 tbsp – minced Onion
• 1/2 tsp – Oregano
• 1/2 tsp – pepper
• salt
• 2 tbsp – Cumin seeds powder
• 2 tbsp – Coriander seeds powder
• 1/2 tsp – Red Chilli powder
• 1/4 tsp – Turmeric powder
• 1/2 tsp – Garam Masala
• 1/2 cup – Olive oil
• 1 tbsp – Vinegar
• 1 tbsp – Lemon juice

Method:

  1. Make criss-cross incisions into the leg of lamb.
  2. Mix all the ingredients.
  3. Marinate the meat with the above mixture.
  4. Refrigerate for 10 hours.
  5. Preheat the oven at 450 degree F.
  6. Place the meat in the oven.
  7. Reduce the oven temperature to 325 degree F.
  8. Let the lamb bake for 2.5 -3 hours till it is tender, basting often with the sauce in baking dish.
  9. Serve with crunchy salad.
