Ingredients:
• 3 kg – boneless leg of lamb
• 7-8 – Garlic cloves, minced
• 1/4 tsp – minced Ginger
• 2 tbsp – minced Onion
• 1/2 tsp – Oregano
• 1/2 tsp – pepper
• salt
• 2 tbsp – Cumin seeds powder
• 2 tbsp – Coriander seeds powder
• 1/2 tsp – Red Chilli powder
• 1/4 tsp – Turmeric powder
• 1/2 tsp – Garam Masala
• 1/2 cup – Olive oil
• 1 tbsp – Vinegar
• 1 tbsp – Lemon juice
Method:
- Make criss-cross incisions into the leg of lamb.
- Mix all the ingredients.
- Marinate the meat with the above mixture.
- Refrigerate for 10 hours.
- Preheat the oven at 450 degree F.
- Place the meat in the oven.
- Reduce the oven temperature to 325 degree F.
- Let the lamb bake for 2.5 -3 hours till it is tender, basting often with the sauce in baking dish.
- Serve with crunchy salad.
