Ingredients:
• 1 medium sized Brinjal
• 1/2 tsp – coriander – cumin powder
• 1/2 tsp -red chilli powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – amchur
• Salt to taste
• Rice flour – 1/2 bowl
• Oil for shallow frying
Method:
- Cut the brinjal into round slices and soak it in water.
- Drain the water completely and apply chilli powder, coriander-cumin powder, turmeric powder and salt to it.
- Heat a non-stick frying pan and pour oil enough for shallow frying.
- Dip the brinjal slices in rice flour and fry them in the pan till crisp on both sides.
- Sprinkle amchur powder and serve hot with dal and rice.
