Ingredients:

• 1 medium sized Brinjal
• 1/2 tsp – coriander – cumin powder
• 1/2 tsp -red chilli powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – amchur
• Salt to taste
• Rice flour – 1/2 bowl
• Oil for shallow frying

Method:

  1. Cut the brinjal into round slices and soak it in water.
  2. Drain the water completely and apply chilli powder, coriander-cumin powder, turmeric powder and salt to it.
  3. Heat a non-stick frying pan and pour oil enough for shallow frying.
  4. Dip the brinjal slices in rice flour and fry them in the pan till crisp on both sides.
  5. Sprinkle amchur powder and serve hot with dal and rice.
