Ingredients:

• 4 – potatoes, boiled and mashed
• 2 – tomatoes, finely chopped
• 1 – onion, finely chopped
• 1/2 tsp – Garam Masala
• 1 tsp – chilli powder
• 1.5 tsps – oil
• 1/2 tsp – Mustard Seeds
• For uttappam:
• 1 cup – Rice
• 1/2 cup – Urad Dal
• 2 tsp – Methi seeds
• 3 tsp – Poha

Method:

  1. For uttappam:
  2. Soak rice, urad dal and methi in water for 7-8 hours and grind into a smooth paste along with the poha. Keep it to ferment overnight.
  3. The next day, boil and mash the potatoes and keep aside.
  4. Heat the oil in a pan, add mustard seeds. Once they splutter, add chopped onion and tomatoes.
  5. Cook for 10 mins or till the oil separates. Then add mashed potatoes, a little water, chilli powder and garam masala.
  6. Cook for another 10 mins.
  7. Meanwhile, heat a pan with little oil spread on it. Pour a ladleful of batter and spread it a little.
  8. After 10 seconds put the prepared masala on the uttappam and spread it.
  9. Cook for 5 mins and then flip and cook for 2 more mins.
  10. Serve hot with chutney or sauce.
