Ingredients:

• 1 -small head Broccoli
• 1 -carrot peeled, sliced thinly
• 1- Cucumber sliced thinly
• 1 -onion sliced thinly
• 1- Cabbage leaf shredded coarsely
• 1- Celery stalk, cleaned and sliced thinly
• 4-5 -French beans, sliced diagonally
• 1 -zucchini sliced thinly
• 2- Green chillies chopped finely
• 2 flakes -garlic chopped finely
• 1 inch -ginger chopped finely
• 1 tbsp. white Vinegar
• 1 tbsp. Corn flour
• 1 tsp. soya sauce
• salt
• 1 tbsp. Olive oil

Method:

  1. Put half green chillies in 2 cups salted water. Bring to boil, add broccoli, simmer for 2 minutes.
  2. Drain broccoli in colander, run tap water over it till cooled.
  3. Heat oil in non-stick pan, add carrots, beans, stir-fry for 2-3 minutes.
  4. Add onions, and all other vegetables. Stir-fry till vegetables are bright and crunchy.
  5. Dissolve ginger, garlic, remaining chillies, salt, sauce, vinegar, corn flour, in 1 cup water.
  6. Add to stir fried vegetables, stir and cook till gravy is transparent and thick.
  7. Add broccoli, toss to mix veggies well and blend flavours.
  8. Serve hot and fresh with cocktails, mocktails, or as an accompaniment.
