Ingredients:
• 1 -small head Broccoli
• 1 -carrot peeled, sliced thinly
• 1- Cucumber sliced thinly
• 1 -onion sliced thinly
• 1- Cabbage leaf shredded coarsely
• 1- Celery stalk, cleaned and sliced thinly
• 4-5 -French beans, sliced diagonally
• 1 -zucchini sliced thinly
• 2- Green chillies chopped finely
• 2 flakes -garlic chopped finely
• 1 inch -ginger chopped finely
• 1 tbsp. white Vinegar
• 1 tbsp. Corn flour
• 1 tsp. soya sauce
• salt
• 1 tbsp. Olive oil
Method:
- Put half green chillies in 2 cups salted water. Bring to boil, add broccoli, simmer for 2 minutes.
- Drain broccoli in colander, run tap water over it till cooled.
- Heat oil in non-stick pan, add carrots, beans, stir-fry for 2-3 minutes.
- Add onions, and all other vegetables. Stir-fry till vegetables are bright and crunchy.
- Dissolve ginger, garlic, remaining chillies, salt, sauce, vinegar, corn flour, in 1 cup water.
- Add to stir fried vegetables, stir and cook till gravy is transparent and thick.
- Add broccoli, toss to mix veggies well and blend flavours.
- Serve hot and fresh with cocktails, mocktails, or as an accompaniment.
