Ingredients:

• 10 small round Brinjals
• 2 tbsp – Vinegar
• 1 tbsp – Brown sugar
• 1 tsp – raisins, chopped
• Salt to taste
• Oil as required
• To grind:
• 2 medium sized Onions
• 2.5 cm piece Ginger
• 4 Cloves Garlic
• 2 Green chillies
• 1 tsp – Mustard Seeds
• 1/2 tsp – Turmeric powder
• 1/2 tsp – chilli powder
• 1/4 coconut, grated

Method:

  1. Wash brinjals and slit them into four without cutting them apart. Keep aside.
  2. Heat a kadai on fire and add 3 tbsp – oil.
  3. Fry the ground masala pasta to a golden colour. Remove.
  4. In the same kadai add the raisins and fry for a second. Remove.
  5. Stuff this mixture adding salt inside the slit brinjals.
  6. Arrange all the stuffed brinjals in a shallow pan.
  7. Sprinkle a little water and oil over them.
  8. Cover and cook till brinjals are tender.
  9. Add sugar and vinegar and simmer for a few minutes. Serve hot.
