Ingredients:

• Onion – 1 cup, thinly sliced
• Vinegar – ½ cup
• kashmiri chilli powder – ½ tsp
• green Capsicum – ½ cup, thinly sliced (discard seeds)
• red Capsicum – ½ cup, thinly sliced (discard seeds)
• Tomato – ½ cup, sliced (discard seeds)
• Carrot – ½ cup, cut into juliennes
• Cabbage – ½ cup, shredded
• salt to taste

Method:

  1. Prepare all the vegetables.
  2. Toss onion with vinegar, chilli powder and salt and leave aside for 6-8 hours.
  3. Mix rest of the vegetables together and keep covered in the refrigerator.
  4. About 1.5 hour before serving, the vegetables with onion.
  5. Taste and correct the seasoning.
