Ingredients:
• 250 g – gooseberries (amla)
• 1 – small, Raw Mango
• 2 tbsp – Mustard Seeds
• 1 tbsp – chilli powder
• 1 tsp – Turmeric powder
• 1/2 tsp – asafetida powder
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Saunf (fennelseeds)
• 1/4 cup – salt
Method:
- Slice gooseberries, remove segments and discard stones.
- Add half the salt and keep aside.
- Grate mango, add salt, turmeric and keep aside for 1 hour.
- Drain out water from mango and save it for later use.
- Crush mustard seeds coarsely.
- Add all other masala and grind them with mustard seeds.
- Add water drained from the mango and blend to make a paste.
- Drain out water from gooseberries.
- In a large bowl, mix masala paste and gooseberries.
- Transfer to a wide glass jar and keep aside for 2 days.
- Make sure to mix frequently in between, keeping lid closed.
- It is now ready to serve.
