Ingredients:

• 1 cup – chopped Dates
• 1 cup – chopped dried Apricots
• 1 cup – Coconut Milk
• 1 cup – Orange juice
• 2/3 cup – Brown sugar
• 125 gm – Butter (melted)
• 1.5 tsp – soda bicarbonate
• 1/4 – cup boiling water
• 2 eggs – lightly beaten
• ¾ cup – whole meal self-rising flour
• ¾ – cup whole meal plain flour
• 1 tsp – mixed spice

Method:

  1. Combine the first 4 ingredients, cover and stand overnight.
  2. Add sugar, butter, soda bicarbonate and water to the date mixture and combine well.
  3. Stir in eggs and sifted, dry ingredients.
  4. Spoon into a greased and lined loaf pan.
  5. Bake in an oven at 180 degrees C for 60 mins.
  6. Cool slightly before removing from the pan.
