Ingredients:
• 1/2 cup – flour
• 1/3 cup – Sugar
• 2 eggs
• 2 cups – Cream
• 1/3 cup – castor Sugar
• 2 tbsp – water
• 2 apples (chopped)
• 2 slices – Pineapple
• 1 cherry
• 1/2 tsp – Strawberry essence
• 1/4 tsp – red food colour
Method:
- Beat together eggs, sugar and water over a pan of hot water.
- Add quarter tsp of strawberry essence and a little colour.
- Sieve flour and fold in gently.
- Pour batter into a well greased tin and bake at 180 degrees until done.
- Cool and cut horizontally into 2 layers.
- Beat cream and sugar with quarter tsp of strawberry essence and little colour.
- Divide cream into 2 portions.
- To one portion, add chopped fruit and spread on the bottom layer.
- The other portion is to be used as the decoration along with the cherry on the top layer.
