
Ingredients:
• 2 cups – basmati rice, cooked
• 250 g – carrot, grated
• 50 g – Peanuts
• 3-4 – Red Chillies or as per taste
• 25 g – Urad Dal
• 2 tbsp – coconut, grated
• 1 tsp – Mustard Seeds
• 1/2 tsp – Jeera
• Cashewnuts and Coriander leaves for garnishing
• 1 tbsp – oil
• salt to taste
Method:
- Cook the rice (each grain should be separate).
- Heat the oil and add the urad dal, peanuts, red chillies and grated coconut and wait for an aroma to emanate. Powder the ingredients.
- Heat oil again and temper with mustard seeds and jeera. Add the grated carrots and saute until the raw flavour goes.
- Add the mixture and salt to the rice and mix well.
- Garnish with fried cashewnuts and coriander leaves.
