
Ingredients:
• 4 – egg, hardboiled and shelled
• 1 – large Potato
• 1/2 cup – Tomato puree
• 4 – green chillies, slit
• 2 – medium sized Onions
• 2 tbsp – oil
• 1/2 tsp – chilli powder
• Salt to taste
• Coriander leaves – a few strands
• 1/4 cup – water
Method:
- Heat oil in a pan and fry the boiled eggs a little
- Peel the potato and slice into thin chips. Soak them in water
- Remove the eggs and fry the onions for 3 mins. Cover and cook till the onions become soft.
- Put the green chillies and fry for a minute.
- Add the potato along with water, salt and chilli powder. Close the lid.
- Stir occasionally and cook till the potatoes become soft.
- Put the tomato puree, eggs and cook without lid till the gravy becomes thick.
- Garnish with coriander and serve with roti or rice.
