Ingredients:

• 4 – egg, hardboiled and shelled
• 1 – large Potato
• 1/2 cup – Tomato puree
• 4 – green chillies, slit
• 2 – medium sized Onions
• 2 tbsp – oil
• 1/2 tsp – chilli powder
• Salt to taste
• Coriander leaves – a few strands
• 1/4 cup – water

Method:

  1. Heat oil in a pan and fry the boiled eggs a little
  2. Peel the potato and slice into thin chips. Soak them in water
  3. Remove the eggs and fry the onions for 3 mins. Cover and cook till the onions become soft.
  4. Put the green chillies and fry for a minute.
  5. Add the potato along with water, salt and chilli powder. Close the lid.
  6. Stir occasionally and cook till the potatoes become soft.
  7. Put the tomato puree, eggs and cook without lid till the gravy becomes thick.
  8. Garnish with coriander and serve with roti or rice.
