
Ingredients:
• 1 cup – aubergine, cut in cubes, skinless
• 2 tbsp – Spring onion greens
• 2 tbsp – Spring onion whites
• 2 – Garlic cloves, minced
• 1/2 tsp – chopped Green chillies
• 1 tbsp – oil
• 2 tsp – Lemon juice
• 1/4 tsp – Garam Masala
• 1/2 tsp – roasted Cumins powder
• A pinch of Hing
• salt to taste
Method:
- Arrange aubergine cubes in a baking tray and apply some cooking spray over it.
- Bake it in pre-heated oven for 20 mins and take them out.
- Grind them into a coarse paste and keep aside.
- Heat oil and add cumin seeds into it.
- Once it crackles, add spring onions whites, garlic, green chillies and hing into it.
- Saute everything for a minute and add the paste of aubergine.
- Finally, add the spices, lemon juice and mix everything well.
