Ingredients:

• 1 cup – aubergine, cut in cubes, skinless
• 2 tbsp – Spring onion greens
• 2 tbsp – Spring onion whites
• 2 – Garlic cloves, minced
• 1/2 tsp – chopped Green chillies
• 1 tbsp – oil
• 2 tsp – Lemon juice
• 1/4 tsp – Garam Masala
• 1/2 tsp – roasted Cumins powder
• A pinch of Hing
• salt to taste

Method:

  1. Arrange aubergine cubes in a baking tray and apply some cooking spray over it.
  2. Bake it in pre-heated oven for 20 mins and take them out.
  3. Grind them into a coarse paste and keep aside.
  4. Heat oil and add cumin seeds into it.
  5. Once it crackles, add spring onions whites, garlic, green chillies and hing into it.
  6. Saute everything for a minute and add the paste of aubergine.
  7. Finally, add the spices, lemon juice and mix everything well.
