Ingredients:

• 1 cup – Wheat flour
• 1 cup – Rice flour
• 1 cup – Gram flour
• 1 cup – Corn flour
• 1 cup – Cabbage (Finely chopped)
• 2 cups – Curds (Well beaten with water, added to make buttermilk)
• 1 medium Onion (Finely cut into long strips)
• 6 to 7 – Green chillies )Finely chopped)
• 2 pieces – Garlic (Crushed)
• 1/2 tsp – Turmeric
• Oil
• 1 tsp – Sugar
• Salt to taste

Method:

  1. Mix all flours together. Add cabbage.
  2. Add curds (buttermilk) to make the batter. (The batter should not be too thick or too thin).
  3. Add more buttermilk if needed according to the consistency of batter.
  4. Mix well and keep it aside for about 7 to 8 hours in a warm place.
  5. Before preparing the uttappam, add onion, green chillies, garlic, turmeric, sugar and salt to the batter.
  6. Mix it well.
  7. Heat a non-stick pan and grease it with a little oil.
  8. When the temperature is right, pour a large spoonful of the prepared batter.
  9. Spread it to a little thick round shape.
  10. Put oil on all sides of the uttappam.
  11. Flip once and let the other side cook well.
  12. Repeat for all of the remaining.
  13. Serve hot with green chutney, tomato ketchup or pickles.
