Ingredients:

• For Humus:
• 1/2 cup – boiled chick peas
• 2 tbsp – white sesame seeds
• Salt to taste
• 1 tbsp – Vinegar
• Grind the above to make a smooth paste
• For Garlic Mayonnaise
• 2 – whole eggs
• 1 cup – canola/veg oil
• 2 pods – Garlic crushed
• salt to taste
• 2 tbsp – Vinegar
• 1/4 tsp – black pepper powder
• 1/4 tsp – mustard powder
• For Picked Cucumber
• 1 medium Cucumber
• 1/2 cup Vinegar
• 2 pinches salt
• 2 pinches mustard powder
• For French fries
• 1 large Potato washed, peeled, cut into long strips and deep fried.
• For Filling
• 2 breasts of Chicken deboned
• salt to taste
• 1 tbsp of Vinegar
• 1 tsp pepper
• 1 tbsp Ginger Garlic paste

Method:

  1. For Humus: Grind the ingredients to make a smooth paste.
  2. For Garlic Mayonnaise:
  3. Whip eggs in a blender till frothy.
  4. Add all dry ingredients and vinegar.
  5. Whip again for 1 min.
  6. Slowly add the oil and keep whipping till it becomes a fluffy smooth paste and thickens. Never dump the oil.
  7. For Picked Cucumber:
  8. Cut cucumber length wise and mix in all the other ingredients. Keep in air tight container for 2 days.
  9. For Filling
  10. Marinate the chicken in the said ingredients overnight in the refrigerator.
  11. Bake or steam till tender.
  12. Shred and grill it or saute in non-stick pan with very little oil.
  13. Use a pita bread or phulka.
  14. Put cooked chicken in the centre length wise.
  15. Keep pickled cucumbers length wise. Roll it.
  16. Serve hot with French fries, humus, garlic mayonnaise.
