
Ingredients:
• 6 – Eggs, hard boiled
• 4 – Potatoes, boiled
• 1/2 – Coconut
• 1 – Medium, Onion
• 1 tsp – Turmeric powder
• 1/2 tsp – Jeera/Cumin Seeds
• 1 tsp – Coriander/Dhania
• 2 tsp – Chilli powder
• 1 tsp – Methi
• 1 small ball – Tamarind
• 3 flakes – Garlic
• 1/2-inch – Ginger
• 3 – Chillies, Green
• 2 tbsp – Oil
Method:
- Cut the boiled eggs into halves and the boiled potatoes into 4 parts.
- Now scrape the coconut, and grind it with the other ingredients into a fine paste.
- Heat oil in a pan and saute the sliced green chillies and onions for the seasoning. Keep aside.
- Now fry the ground masala in the same oil, and add a little water for the curry, and add salt to taste.
- Cook until the masala is well mixed.
- Now add eggs and simmer on slow fire, until the eggs mix well with the curry.
- Add the seasoning and cook for 1-2 minutes.
- Serve with rice or roti.
