Ingredients:

• 6 – Eggs, hard boiled
• 4 – Potatoes, boiled
• 1/2 – Coconut
• 1 – Medium, Onion
• 1 tsp – Turmeric powder
• 1/2 tsp – Jeera/Cumin Seeds
• 1 tsp – Coriander/Dhania
• 2 tsp – Chilli powder
• 1 tsp – Methi
• 1 small ball – Tamarind
• 3 flakes – Garlic
• 1/2-inch – Ginger
• 3 – Chillies, Green
• 2 tbsp – Oil

Method:

  1. Cut the boiled eggs into halves and the boiled potatoes into 4 parts.
  2. Now scrape the coconut, and grind it with the other ingredients into a fine paste.
  3. Heat oil in a pan and saute the sliced green chillies and onions for the seasoning. Keep aside.
  4. Now fry the ground masala in the same oil, and add a little water for the curry, and add salt to taste.
  5. Cook until the masala is well mixed.
  6. Now add eggs and simmer on slow fire, until the eggs mix well with the curry.
  7. Add the seasoning and cook for 1-2 minutes.
  8. Serve with rice or roti.
