Ingredients:

• 1 cup – couscous, cooked and washed
• Juice of 1 Lemon
• 2 – green chillies, chopped
• Salt – to taste
• 2 tbsp – cilantro, finely chopped
• 1/2 tsp – fresh ground black pepper
• 1 Clove – garlic, minced
• 1 – ginger, minced
• 1 – onion, chopped
• 1/2 cup – scallions, finely chopped
• 1 tbsp – mint, finely chopped | 1 – cucumber, finely chopped
• 1 – red bell pepper, chopped
• 1 – yellow bell pepper, chopped
• 1 – green bell pepper, chopped
• Dressing:
• 1 tbsp – Olive oil
• 2 tsp – Vinegar
• 1/2 tsp – Dijon mustard
• 1/2 tsp – Worcestershire sauce
• 1/2 tsp – Tabasco sauce
• 1/2 tsp – black pepper, powdered
• 1/2 tsp – paprika
• Salt – to taste
• 1 tsp – dried dill
• 1 tsp – Dhania powder
• 1 tsp – Jeera powder

Method:

  1. Mix the couscous with chillies, cilantro, salt, pepper, garlic, ginger, onion, scallions, mint, cucumber, bell peppers and lemon juice, and let sit for 1/2 hour.
  2. Meanwhile blend all the ingredients for the dressing in a jar. Shake well to mix thoroughly.
  3. After half an hour, pour dressing over the salad, toss well, and serve garnished with cilantro and mint.
