Ingredients:
• 250 g – Broccoli (cut into pieces)
• 3 cups – Chicken stock (or water and 1 Chicken stock cube)
• 1 – small Onion (chopped)
• 1 – Clove of Garlic (optional)
• 2 tbsp – oil
• 1/2 cup – low fat Milk
• Salt and pepper
Method:
- Heat oil. Saute onion and garlic, add chopped broccoli, chicken stock or water and crumbled stock cubes.
- Cook till it is tender.
- Remove from the heat.
- Liquidise in a blender, add salt and pepper.
- Heat the soup, add milk and serve with melba toast.
