Ingredients:
• For the stuffing: 1 cup – carrots, grated
• 2 – green chillies, finely chopped
• a pinch of Turmeric powder
• 1 tsp – coriander powder
• 1 tsp – chat masala
• 1 tsp – Cumin seeds
• salt to taste
• 1 tsp – oil
• For the dough: 1 cup – whole Wheat flour
• water as required
• salt to taste
• Ghee for parathas
Method:
- For the dough: Mix salt to the wheat flour.
- Add water bit by bit and knead a pliable dough. Keep aside for 30 minutes.
- For the stuffing: Heat oil in a pan and add the cumin seeds. When the seeds splutter, add the green chillies and saute.
- Add grated carrots and saute.
- Add turmeric powder, coriander powder and salt to taste and cook for some time.
- Add chat masala and mix well.
- When the stuffing is ready, let it cool. Then make small balls out of the stuffing and keep aside.
- For the flat bread: Take lemon-sized dough balls and roll out into 3-inch diameter discs. Add the stuffing balls, seal from all sides and pinch off the excess dough.
- Flatten the stuffed ball using your palm and dust with flour.
- Roll out into 6-inch diameter disc.
- One by one, place the discs on a hot griddle and let them get a few brown spots on one side.
- Flip the flat bread and cook the other side.
- Apply ghee on the top side and flip again. Cook both the sides and transfer onto a serving plate.
- Serve with raita or plain yogurt.
