Ingredients:
• white Cabbage – 1 cup, shredded
• red Cabbage – 1 cup, shredded
• Leeks – ½ cup, sliced
• Carrot – 1 cup, peeled and grated
• green Capsicum – ½ cup, cut into strips
• Apple – 1, peeled, cored, and chopped
• Raisins – 2 tbsp
• roasted Cashew nuts – 3 tbsp, chopped
• Olive oil – ¼ cup
• Balsamic Vinegar – 2 tbsp
• Honey – 1 tbsp
• yellow mustard – 1 tbsp
• Parsley – 2 tbsp, chopped
• pepper to taste
• salt to taste
Method:
- Combine all the ingredients from white cabbage to cashew nuts.
- Mix together oil, vinegar, honey, mustard, salt, and pepper.
- Pour over the vegetable mixture and toss well.
- Sprinkle parsley on top.
