Ingredients:

• white Cabbage – 1 cup, shredded
• red Cabbage – 1 cup, shredded
• Leeks – ½ cup, sliced
• Carrot – 1 cup, peeled and grated
• green Capsicum – ½ cup, cut into strips
• Apple – 1, peeled, cored, and chopped
• Raisins – 2 tbsp
• roasted Cashew nuts – 3 tbsp, chopped
• Olive oil – ¼ cup
• Balsamic Vinegar – 2 tbsp
• Honey – 1 tbsp
• yellow mustard – 1 tbsp
• Parsley – 2 tbsp, chopped
• pepper to taste
• salt to taste

Method:

  1. Combine all the ingredients from white cabbage to cashew nuts.
  2. Mix together oil, vinegar, honey, mustard, salt, and pepper.
  3. Pour over the vegetable mixture and toss well.
  4. Sprinkle parsley on top.
