Ingredients:

• 1 – Egg yolk
• 1/4 tsp – salt
• 1/8 tsp – black pepper
• 1/2 tsp – mustard
• 1/2 tsp – Sugar
• 1 cup – salad oil
• 1 tbsp – Lemon juice

Method:

  1. Break the yolk in a bowl
  2. Add salt, pepper, mustard and sugar. Mix it well
  3. Add salad oil drop by drop, whisking the egg mixture till it thickens
  4. Gradually add vinegar and mix thoroughly. Instead of lemon juice can add taragon vinegar or cider vinegar
  5. Can add 1 tbsp ketchup , 2 tbsp chopped olives and 2 tbsp chopped celery
