Ingredients:

• 1/2 cup – Cooked Quinoa
• 1 cup – All-purpose flour
• 1 cup – rolled oats
• 1/2 cup – strawberries (chopped)
• 1/2 tsp – Vanilla extract
• 1 tsp – Baking powder
• 1/4 cup – Sugar
• 5 tbsp – Butter (at room temperature)
• 1/2 cup – Buttermilk

Method:

  1. In a small bowl, beat the sugar and butter until they turn soft, then add the vanilla extract and buttermilk and keep aside.
  2. Meanwhile combine the cooked quinoa, all-purpose flour, rolled oats, chopped strawberries and baking powder together and mix well.
  3. Add gently the wet ingredients to the dry ingredients and mix well.
  4. Preheat the oven to 350 degrees F, line a baking sheet over a baking tray, make small balls from the mixture, arrange over the baking sheet and bake them in middle rack of the oven for 20-25 minutes.
  5. Enjoy warm.
