Ingredients:
• 1/2 cup – Cooked Quinoa
• 1 cup – All-purpose flour
• 1 cup – rolled oats
• 1/2 cup – strawberries (chopped)
• 1/2 tsp – Vanilla extract
• 1 tsp – Baking powder
• 1/4 cup – Sugar
• 5 tbsp – Butter (at room temperature)
• 1/2 cup – Buttermilk
Method:
- In a small bowl, beat the sugar and butter until they turn soft, then add the vanilla extract and buttermilk and keep aside.
- Meanwhile combine the cooked quinoa, all-purpose flour, rolled oats, chopped strawberries and baking powder together and mix well.
- Add gently the wet ingredients to the dry ingredients and mix well.
- Preheat the oven to 350 degrees F, line a baking sheet over a baking tray, make small balls from the mixture, arrange over the baking sheet and bake them in middle rack of the oven for 20-25 minutes.
- Enjoy warm.
