Ingredients:

• 1 cup (140g) – all-purpose flour/maida
• 3/4 cup (200 g)- sweetened condensed Milk
• 1/4 cup (60ml) -melted Butter (or margarine)
• 1.5 tsp -baking powder
• 1/2 tsp – baking soda (soda bi-carb)
• 1 tsp- vanilla essence
• 1/3 cup (5 tbsp/ 75 ml) – water
• powdered sugar/ cocoa for dusting (optional)
• Few – Cherries dipped in chocolate (optional)

Method:

  1. Preheat oven to 400F (200C).
  2. Sift the flour along with baking powder and soda together in a bowl.
  3. In another bowl, mix the condensed milk, butter, vanilla essence along with water. Stir well.
  4. Pour the wet ingredients into the dry and mix gently.
  5. The batter should be of a dropping consistency.
  6. Pour this into a greased 7 inch diameter cake pan.
  7. Bake for 10 minutes and then reduce the heat to 300F (150C) and bake for another 15 minutes.
  8. This is ready when the cake separates from the sides of the pan, gets a brown tinge.
  9. As a further check insert a skewer in the centre of the cake and it should come out dry and clean.
  10. Remove from the oven.
  11. Let it sit for a few minutes (say about 5 minutes).
  12. Place it upside down (so that the bottom faces up) on a plate.
