Ingredients:
• 1 cup (140g) – all-purpose flour/maida
• 3/4 cup (200 g)- sweetened condensed Milk
• 1/4 cup (60ml) -melted Butter (or margarine)
• 1.5 tsp -baking powder
• 1/2 tsp – baking soda (soda bi-carb)
• 1 tsp- vanilla essence
• 1/3 cup (5 tbsp/ 75 ml) – water
• powdered sugar/ cocoa for dusting (optional)
• Few – Cherries dipped in chocolate (optional)
Method:
- Preheat oven to 400F (200C).
- Sift the flour along with baking powder and soda together in a bowl.
- In another bowl, mix the condensed milk, butter, vanilla essence along with water. Stir well.
- Pour the wet ingredients into the dry and mix gently.
- The batter should be of a dropping consistency.
- Pour this into a greased 7 inch diameter cake pan.
- Bake for 10 minutes and then reduce the heat to 300F (150C) and bake for another 15 minutes.
- This is ready when the cake separates from the sides of the pan, gets a brown tinge.
- As a further check insert a skewer in the centre of the cake and it should come out dry and clean.
- Remove from the oven.
- Let it sit for a few minutes (say about 5 minutes).
- Place it upside down (so that the bottom faces up) on a plate.
