Ingredients:
• 1 cup – chopped Dates
• 1 cup – chopped dried Apricots
• 1 cup – Coconut Milk
• 1 cup – Orange juice
• 2/3 cup – Brown sugar
• 125 gm – Butter (melted)
• 1.5 tsp – soda bicarbonate
• 1/4 – cup boiling water
• 2 eggs – lightly beaten
• ¾ cup – whole meal self-rising flour
• ¾ – cup whole meal plain flour
• 1 tsp – mixed spice
Method:
- Combine the first 4 ingredients, cover and stand overnight.
- Add sugar, butter, soda bicarbonate and water to the date mixture and combine well.
- Stir in eggs and sifted, dry ingredients.
- Spoon into a greased and lined loaf pan.
- Bake in an oven at 180 degrees C for 60 mins.
- Cool slightly before removing from the pan.
