Ingredients:

• 1/2 kg – Potato
• 1 cup – green capsicum, chopped
• 1 cup – red capsicum, chopped
• Size of a Lime – Tamarind
• 1 tsp – Cumin seeds
• 1/2 tsp – Fenugreek
• 2 tsp – fennel
• 1/2 tsp – black pepper Corns
• 1 tsp – chilli powder
• 1/2 tsp – Turmeric powder
• 1 tsp – coriander powder
• 1/4 tsp – Asafoetida powder
• 1 tbsp – Jaggery
• Salt to taste.

Method:

  1. Boil the potatoes, peel and cut into 2cm cubes.
  2. Soak tamarind in 1/2 cup of water and extract the juice.
  3. Crush cumin, fenugreek fennel and pepper together.
  4. Heat the oil in a kadai, add the crushed spices and fry for few seconds.
  5. Add capsicums and fry till capsicums are softened.
  6. Add all the powders and tamarind extract.
  7. Simmer for 2-3 minutes.
  8. Add potatoes, salt and jaggery.
  9. Mix well, cover and simmer on low heat for 5 mins.
  10. Serve.
