Ingredients:

• 250 g – Pumpkin (cut into 1 – inch cubes)
• 3 – whole dry Red Chillies
• 10 g – Fenugreek seeds
• 10 g – Cumin seeds
• 10 g – Turmeric powder
• 10 g – Red Chilli powder
• 15 g – Raw Mango powder
• 15 g – Sugar
• 50ml – cooking oil
• Salt to taste (saendha namak)

Method:

  1. Heat the oil in a flat pan.
  2. Add cumin and fenugreek seeds and fry until spluttering stops.
  3. Add dry red chillies and saute for half a minute.
  4. Add the powdered spices and cook for 2-3 mins.
  5. Add the pumpkin cubes, sugar and season with salt.
  6. Cook until pumpkin turns soft.
  7. Sprinkle a little water only if required.
  8. Serve hot with aloo pulao.
