Ingredients:

• 1.5 cups – basmati rice, soaked in water for 2 hours, drained
• 8 cloves, pounded
• 4 pieces cinnamon, pounded
• 4 cardamoms, pounded
• 1/2 cup – Milk
• 1/2 tsp – Saffron
• 1 tsp – Cumin seeds
• 1 tsp – chilli powder
• 100 gms – cauliflower, chopped
• 100 gms – peas
• 2 tomatoes, chopped
• 1 cup coriander leaves, chopped
• 1/2 cup Ghee
• Salt to taste

Method:

  1. Heat ghee in a pressure cooker.
  2. Add pounded spices. Brown.
  3. Add cumin seeds.
  4. Add all vegetables. Stir fry.
  5. Add rice and saffron mixed with milk. Add chilli powder and 4 cups – hot water.
  6. Cook under pressure for 7 mins.
  7. The rice should be fluffy and vegetables cooked. Serve with dal.
