Ingredients:

• 450 g – button Mushrooms
• 300 ml -red wine
• 550 g – tomatoes, seeded & chopped
• 1 – onion, chopped finely
• 1 Clove – garlic, chopped finely
• 1 tbsp – Coriander seeds
• 1 tbsp – Tomato puree
• 2 tbsp – Olive oil
• black pepper, ground as required
• Parsley as required
• salt as required

Method:

  1. Heat the olive oil in a pan, add the chopped onions, garlic and saute till they change colour.
  2. Next add the coriander seeds, wine, tomato puree and stir well.
  3. Add the button mushrooms, chopped tomatoes, salt and pepper to taste.
  4. Let the mixture boil and remove once the mushrooms become soft.
  5. Remove from heat, cool and chill for several hours before serving.
