Ingredients:
• 10 – Okra
• 1 cup – Tamarind extract
• 2 – Tomatoes (pureed)
• 5 – Shallots
• 3 Garlic Cloves
• 1 tsp – Pepper powder
• 1 tsp – Coriander powder
• 1/2 tsp – Red Chilli powder
• 1/4 tsp – Cumin seed powder
• 1/4 cup – Gingili oil
• 1 tsp – Mustard seeds, Fenugreek and Urad Dal
• 5 – Curry leaves
• Salt
Method:
- Heat the gingili oil in a kadai, add the mustard seeds, fenugreek seeds, urad dal and let them splutter.
- Add the whole shallots, curry leaves, garlic cloves and stir fry until the shallots turn translucent.
- Add the okra pieces and stir for a few minutes.
- Add the tamarind juice, pureed tomatoes with pepper powder, cumin seed powder, coriander powder, red chilli powder and salt.
- Bring the gravy to a boil and cook until the oil separates. Take off heat.
- Serve hot with rice and papads.
