Ingredients:
• 4 – green peppers, medium size
• 500g – minced Chicken
• 1 – onion, chopped
• 1 cup – cooked Rice (partially cooked)
• 1/4 tsp – ground pepper
• 1 – Clove garlic, chopped
• 10 oz. – concentrated Tomato soup
• 1/2 cup – water
• 1 cup – emmenthal cheese, grated
Method:
- With a small knife, cut off top of peppers, de-seed them and set aside.
- In a bowl, mix minced chicken, onion, rice, ground pepper and garlic.
- Stuff green peppers with mixture and place them in a circle in an rectangular container. Set aside.
- Mix tomato soup with water, pour over peppers and cook in microwave on high (100%) for 30 mins.
- Remove from microwave and sprinkle with grated cheese.
- Cover and let stand 5-10 mins until cheese is melted.
