
Ingredients:
• 2 cups – all-purpose flour
• 1/2 cup – cocoa powder
• 3/4 cup – zucchini, grated
• 1 tsp – baking powder
• 2 – eggs, beaten
• 100 g – butter, at room temperature
• 3/4 cup – Sugar
Method:
- Preheat the oven to 350 F.
- Grease muffins moulds and line them with muffin cases.
- Sift the flour, cocoa powder and baking powder into a large bowl.
- Cream the butter and sugar in another vessel.
- To this, add the beaten eggs and beat until soft and creamy.
- Add the grated zucchini and mix.
- Pour the wet ingredients into the flour and stir; do not over mix.
- Pour the mixture into the greased muffin moulds and bake for 20-25 minutes, until they are golden or a skewer inserted into the centre comes out clean.
