
Ingredients:
• 10 g – fresh Galangal
• 1 – egg, for marination
• 1 tbsp – Corn flour, for marination
• 2 – fresh Lemon grass, crushed
• 5 – kafir Lime leaves
• 10 – fresh Red Chillies
• 20 – sweet Basil leaves
• 4 – chopped Onions
• 1 cup – stock
• 180 g – sliced fish
• 3 tbsp – fish sauce
• 2 tbsp – Lemon juice
• 2 tbsp – Oyster sauce
Method:
- Pound the chillies, lemon grass, kafir lime leaves and basil leaves together and keep aside.
- Marinate the fish with egg and corn flour and deep-fry in hot oil.
- Heat 1 tbsp of oil in a pan and stir-fry the pounded ingredients with sliced ginger and onions.
- Add the stock, oyster sauce, fish sauce and bring to boil in a clay pot.
- Add fish and finish with lime juice.
- Serve hot. |
