Ingredients:
• For the cake:
• 1.5 cup – all purpose flour
• 1.5 cup – Sugar
• 1/2 cup – cocoa
• 1 tsp – salt
• 1/2 cup – Butter
• 1.5 cup – buttermilk
• 1 tsp – vanilla essence
• 2 – eggs
• For the frosting:
• 1 cup – Sugar
• 1/2 cup – cocoa
• 1/2 cup – Butter
• 1/2 cup – Milk
• 1 tbsp – Corn syrup,
• 1.5 cup – castor Sugar
• 1 tsp – vanilla essence.
Method:
- In a bowl, mix together flour, sugar, cocoa and salt. Add butter, buttermilk and vanilla essence and beat well for several mins until all the ingredients have blended well.
- Add the eggs. Beat well again for several mins
- Grease and lightly flour a baking pan and pour the mixture into it. Heat the oven to 350 degree F and bake for about 45 mins. Meanwhile prepare the quick fudge frosting.
- Mix both the sugars and cocoa in a saucepan and stir in butter, milk and corn syrup.
- Place it on medium heat and bring to a boil, stirring constantly
- Remove from heat and immerse the pan in cold water
- Add the vanilla essence and stir well.
- When the cake is ready cool it on a wire rack
- Pour the fudge frost, which should be of a fairly thick consistency, and still warm, on top of the cake. Let it run down the sides
- Smooth over evenly on top and around sides with a palette knife. Let set for a few mins
