Ingredients:

• 6-8 Brinjals
• 3 – Green chillies
• 1/2 tsp – Jeera
• small piece – Ginger
• 3/4 of a bunch – Coriander leaves

Method:

  1. Grind all the ingredients, except the brinjals, with a little water. Keep aside.
  2. Cut the brinjals in four, leave the stem attached.
  3. Stuff the brinjals with the paste.
  4. Heat a little oil, add a little salt and a pinch of turmeric powder, then add the brinjals and fry them on high heat for 5-6 minutes.
  5. Then reduce the flame, cover and cook for some time, until the brinjals soften – around 10-15 mins.
  6. The stuffed brinjals are ready to serve.
