Ingredients:

• 15 – litchis, peeled and deseeded
• 1/3 – medium muskmelon, peeled and diced
• 2 or 3 drops – vanilla essence
• 2 tsp – Sugar
• 2 or 3 pinches – salt
• 500 ml – chilled water

Method:

  1. Discard any brown parts of the litchi flesh.
  2. Put all the ingredients into an electric blender.
  3. Run, till mixture is very smooth.
  4. Add water, run again, till mixture is smooth and frothy.
  5. Pour into 3 individual glasses.
  6. Chill, till required.
