Ingredients:

• 1 kg – green mangoes
• 1 kg – Brown sugar
• 200 g – fresh Ginger
• 1.5 cups – Vinegar
• 3 tbsp – chilli powder
• 1 tbsp – salt

Method:

  1. Wash, peel and slice the mangoes into very thin pieces.
  2. Peel and mince ginger finely.
  3. Mix the vinegar, sugar, salt, chilli powder and ginger in a saucepan. Cook for about 15 mins, stirring constantly.
  4. Add mangoes and simmer on a very low fire till the mangoes are pulpy.
  5. Cool and store in dry airtight bottles.
