
Ingredients:
• 3/4 cup – pre-cooked black beans (drained and mashed)
• 1/2 cup – salsa
• 1/2 cup – scallions chopped (green onion)
• 2 tbsp – freshly chopped Cilantro
• 4 oz – shredded cheese
• 1 tbsp – chilli flakes
• 1/2 – red bell pepper, diced
• 1 – tomato, diced
• 8 – tortillas
Method:
- Combine all the ingredients – except the tortillas.
- Warm tortillas, evenly spread mixture onto the tortillas.
- Top with remaining tortillas and cut into quarters before you serve.
