Ingredients:
• 150 g – Rice flour
• 2 -Eggs
• 75 g -Sugar
• 60 ml – Coconut Milk
• 3 tbsp – Butter ( melted )
• 2 tsp – Baking powder
• 1 tsp – Cardamom powder
• 2 tbsp – Fresh, grated coconut.
Method:
- Preheat the oven to 180 degree Celsius.
- Mix the rice flour, baking powder and sugar in a large bowl.
- Beat in the eggs, cardamom powder and coconut milk into the mixture.
- Now add the melted butter into the rice flour mixture.
- Grease and line four ramekins.
- Pour the mixture equally into the ramekins and sprinkle the grated coconut on top of it.
- Bake in the preheated oven for 30 to 40 minutes or until skewer inserted comes out clean.
- Cool it in the wire rack for about 5 mins.
- Serve while warm.
