Ingredients:

• Butter beans – 1 cup
• Boiled Potato – 2
• Thick Coconut Milk – 1 cup
• Garlic – 1 tsp
• Green chillies – 3
• Mustard Seeds – 1 tsp
• Curry leaves – 2 tsp
• Red Chillies – 2
• Salt to taste
• Oil – 2 tbsp
• Coriander powder – 1 tsp
• 1/2 cup – water

Method:

  1. Boil butter beans. Keep aside
  2. Heat oil in a pan
  3. When hot, add mustard seeds, red chillies and curry leaves and fry
  4. Add chopped boiled potatoes, 2 whole peppercorns and fry on low heat
  5. Add coriander powder and green chillies followed by the boiled butter beans. Mix well
  6. Add salt and 1/2 cup water. Simmer for 5 minutes
  7. Then add the coconut milk. Stir
  8. After 2 minutes, take off the heat
