Ingredients:

• 4 cups – Spinach (palak), finely chopped
• 1/2 cup – Cooked sweet Corn kernels
• 1/2 cup – Skimmed Milk curds, beaten until smooth
• 1/2 cup – Onion, finely chopped
• 2 tsp – Garlic, minced
• 1 tsp – Ginger, minced
• 1 tsp – Chilli powder
• 1/2 tsp – Turmeric powder
• 1 tsp – Garam Masala powder
• Salt to taste
• 2 tsp – Oil

Method:

  1. Heat oil in a non-stick pan and saute the onion, garlic and ginger until pink
  2. Add the chilli, turmeric and the garam masala powders with 2 tbsp of water and fry for 1 min
  3. Now add the spinach and salt
  4. Cover and cook on a low heat till the spinach gets cooked
  5. Add the corn kernels and curd
  6. Simmer till it thickens.
