Ingredients:
• 1 cup – red, yellow and green capsicum, chopped
• 1 cup – diced Carrot
• 1 cup – boiled Corn
• 1/2 tsp – grated Ginger
• 1/2 tsp – pepper powder
• 1 Green chilli
• 1 cup each – chopped Tomato and Onion
• 1 tsp – Lemon juice
• 1/2 tsp – ghee/oil
• 1/2 tsp – cumin
• Salt to taste
Method:
- Heat ghee/oil in a pan, add cumin and allow it to splutter.
- Add chopped green chilli, ginger, onion and fry well.
- Add capsicum, carrot, salt, pepper powder and fry.
- Now add boiled corn and stir well.
- Mix with cooked rice, add lemon juice and serve.
